a good charity is well managed, has low expenses and has major impact.
i like bill and melinda gates foundation. i think working for them/with them would be intellectually stimulating. you get to work with very smart people in trying to solve the world's health problems. in addition to this, they have a huge challenge in trying to manage and distribute the money. something that requires several competent money managers. managing 40 billion dollars is a ridiculously complicated task. trying to spend $40 billion is even harder. its not like you can just throw money at a problem and it solves itself.
locally i personally like the daily bread food bank. the executive director makes $50k, unlike the six figure salary that the heads of a lot of other lesser known non profits make. one could argue that you can't hire a competent manager for 50k. however gerard kennedy was the former head of the food bank. he now gets his chance to run for prime minister. i also like the toronto star (santa claus/fresh air fund) - because the star pays admin costs.
